Quick Healthy Meal Ideas
Being healthy doesn’t have to take a lot of time. Some simple preparation is all you need to make your meals easy and nutritious.
Most Sunday evenings I whip up a frittata for easy lunches and quick healthy snacks for the week ahead. This gives our fridge a healthy go-to snack or easy packed lunches, or a quick breakfast.
Spending the time on the weekend to make quick healthy meals like this one saves you so much time during the week. Being prepared is the easiest way to be healthy.
Frittatas are so easy to make and you can add whatever you like. They are the best quick and health meal idea ever.
Just beat some eggs and add whatever you like. Then bang it in the oven for 25-35 mins (depending on how many eggs you use).
This one has loads of sautéed veggies (carrot beetroot tomatoes onions olives parsley beetroot leaves celery) and feta mixed together with a sprinkle of chipotle smokiness.
There are so many different ways to prepare a frittata, try this one from my food hero Heidi Swanson, or go traditional with a Spanish tortilla. You can add just about anything – fish, meat, vegetables, seeds, nuts, cheese! The list goes on.
HINT: I always like to sauteed my vegetables first – cook down the onion and soften everything – then add this to the egg mix once it is slightly cooled. I find that this method helps blend all the ingredients well so you don’t get everything floating to the top of the egg mixture while it’s cooking.
Recipe:
Ingredients
- 6 free-range organic eggs
- 2 tablespoons of sheep or goat feta or ricotta (optional)
- 3 cups of vege
- 1 tablespoon of olives
- 1 medium onion, diced
- 2 generous handfuls of herbs (dill, parsley, basil, chives, oregano)
- Salt & pepper
Method
Preheat oven to 180 degrees Celsius
Chop vegetables and saute in olive oil until just softened slightly. Put aside and allow to cool for 10min.
Beat the eggs and stir in cheese of choice. Add salt & pepper to your liking along with fresh herbs and olives.
Line a oven-proof dish with baking paper.
Add the vegetables mixture to the eggs and stir well until all ingredients are coated with egg mixture.
Pour into the baking-paper lined dish and pop in pre-heated oven for 25-35 minutes until golden and firm to touch.
Allow to cool – frittatas are always best served at room temperature.

Thank you for sharing this delicious recipe, I made my frittata with broccoli, sweet red pepper and celery in addition to the above as its what I had lying around. It was super easy to make and looked amazing when it came out the oven. Will definitely make it again and experiment with different herbs and veg.
